Squid salad
Ingredients:

▪ Grilled rice paper or glutinous rice mixed with powdered shrimp
▪ 1 tablespoon of fried white sesame seeds
▪ 400g squid
▪ 2 lemons
▪ 50ml rice wine
▪ 2 tablespoons of sugar
▪ Chopped cilantro -
▪ 1 chopped stalk of lemongrass
▪ Crushed garlic
▪ 3 chopped chilies
▪ 1 teaspoon of pepper
▪ 3 tablespoons of fish sauce
▪ 1 tablespoon of Meizan sesame oil
▪ Cucumber for decoration
Directions:
Step 1:
Wash the squid and cut into bite-sized pieces. Dip the squid into hot water and then immerse it in cold water and let it dry, refrigerate. Take out when ready to use.
Step 2:
For the salad: Add the rice wine, juice of both lemons, crushed garlic, Meizan sesame oil, sugar, chopped lemongrass, grilled sesame seeds, cilantro, chilies, pepper, and fish sauce into a big bowl and mix well. Add the squid into the mixture and mix well for good coverage.
Step 3:
Serve the salad on a plate, decorating the dish with cucumber and use grilled rice paper or glutinous rice mixed with powdered shrimp for and extra touch.
